We are pleased to announce that GAIL’s Bakery in Golders Green opened in late 2023 and was helped by Grease Guru in support of grease management compliance. The stunning Grade II listed building boasts an elegant, curved façade and sits in a highly prominent location at the corner of Finchley Road and Golders Green Road, opposite the Golders Green underground and bus stations. It was designed in 1913 for the London, City and Midland Bank, who occupied it until recently.
The right equipment for the job
This was an interesting grease management challenge for Grease Guru, with the bakery requiring both active and passive grease management and pumping solutions including a high-level remote alarm with control panel.
After conducting a survey and discussing with the Gails project team, led by Michelle Pollard-Smith and Property Director Brett Parker, it was decided that the management of fats, oils and grease from the pot wash sink would be best handled by a mechanical Grease Recovery Unit from Greaseshield (EPAS). Additionally, a Thames Water approved passive grease trap would be used for the self-cleaning oven, which is connected to the drainage network.
The Installation of the new equipment
The pumping solution posed a slightly more complex challenge. The kitchen waste needed pumping from the basement to the main sewer. In discussion with our pump manufacturer, it was decided to fit a Drain King 730 HES 240v with control panel, microvent and high-level remote alarm.
The installation teams successfully completed the grease and pump works on site within the scheduled time and budget in October 2023.
GAIL’s first store opened on Hampstead High Street in 2005. Since then, the bakery has expanded to various locations in London, the home counties, and now Oxford, Cambridge, and the North West.
Retailers of artisanal bread, pastries, savouries, cakes, and beverages are a popular addition to any high street or shopping centre. Grease Guru welcome the opportunity to continue support Gail’s grease management objectives in 2024.
